Did they actually explain why she lived a double life as a nanny/barmaid? Or is it one of those Moffat saint/whore things?

I assumed it was so that she had cause to enjoy making souffles, which was of course a key mention at the end. A governess wouldn't be doing the cooking, but a barmaid might. The change of outfit and accent also made the "not what she seems" business very clear. At least that's how I took it--that the double life was there for external reasons, not internal to the episode.

Or Moffat could just continue to have a bit of a woman problem. Or both.
